In one year…

Whoops. I just looked at the last time I blogged and it was in January…

Some things have changed (exercise-wise) since then, and I am actually NOT getting back into running. Kyle and I decided to join a gym (back at the end of January). We used to lift weights together back in college, and we were missing those workouts (he hates running).

Which brings me to my next topic- the reason for joining a gym (other than increasing fitness, improving health, increasing strength, blah, blah, blah) we have a certain event that we want to look our best for…

In exactly one year from today, I will be marrying the love of my life!

Nothing like a wedding dress and fitted suit in front of 100+ people to motivate you to drop a few lbs ๐Ÿ˜‰

So that running- With work, school, wedding planning, and gym workouts, training for a long distance race just wasn’t in the cards for this year. Weight lifting it is!

I should mention that I’m still running, but instead of sticking to a training plan, I go for shorter runs (2-7 miles) on some of our “off” (gym) days. It’s nice not having to stick to a running schedule and just run for fun!

Happy 1 year pre-anniversary Kyle! (that’s a thing, right?) ๐Ÿ˜‰

Getting back into running

WORKOUTS:

Wednesday: 4 x 400 m repeats

Thursday & Friday:ย Active rest days (not on purpose but life happens ๐Ÿ˜‰ )

Saturday: 5 miles- 3 easy + 2 @ 9:00 pace (actual= 3+2 miles: 9:00, 8:45)

Just popping in to say a quick hello!

Right now I’m trying to get back into running. I took some time off because I was feeling burnt out and not enjoying running anymore. It’s not really a hobby if I don’t enjoy it, right?!

I finally feel like I want to train for something (half marathon), but it’s so hard getting back into the swing of things after months of strength training and short 3 mile runs.ย I’ve written out a training plan, but I find it’s harder to train without being signed up for an actual event. I’m sure some of you can relate!

Anyways, I’m telling all of you this to keep myself accountable! If I (try to) keep posting my workouts, it will keep me motivated to stick with it…at least that’s the plan.

Chocolate Covered Banana Protein Microwave Muffin (gluten free) with GNC PUREDGE


I promised y’all yesterday that I would share my new favorite protein-packed recipe! It’s super easy, delicious, filling, healthy, and gluten free!

As we are super close to the holidays, all those annoying/delicious treats are everywhere! And most of you know, I have a MAJOR sweet-tooth. This microwave muffin satisfied that craving (and it’s not really sweet!), and gave me a protein-filled, healthy breakfast. Kyle thought it looked like poo, but he also doesn’t like delicious things like broccoli, spaghetti squash, and brussels sprouts ๐Ÿ˜‰

Now I know some of you (who really know me) are thinking, sheย doesn’t really like chocolate! You’re right! That being said, chocolate is kind of growing on me with age, but I still much prefer non-chocolate items (e.g. vanilla) over chocolate.

However, I recently was sent the Natural Chocolate GNC PUREDGE Complete Protein and it is great! Right now, I’m trying to heal my wonky knee, hip/ass issues (in different legs) but as soon as I start training for my next half marathon, I cannot wait to try the GNC PUREDGE Daily Energy and Complete Amino!

I also got to try the 2 GNC PUREDGE protein bars too. I was running late to work on 2 different days and grabbed them as I rushed out the door. I think I liked the Banana Nut Bread more than the Peanut Butter Cookie Dough- but keep in mind I don’t like peanut butter flavored things.

On to the SUPER easy recipe!

Mash your ripe banana with a fork. It will look super appetizing like baby vomit.

Add 1 scoop of protein powder, coconut flour, egg, cinnamon, baking powder, and almond extract. Mix well and microwave for 2-3 minutes!

Okay, starting to get the poo reference…but I promise it tastes yummy! Almost like a slightly chocolate flavored banana bread ๐Ÿ™‚

Chocolate Covered Banana Protein Microwave Muffin (Gluten free)

  • Servings: 1
  • Difficulty: easy

Ingredients

  • 1 scoop, Natural Chocolate GNC PUREDGE Complete Protein
  • 1 banana, mashed
  • 1 tbsp coconut flour
  • 1 egg (or 2 egg whites)
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • splash of almond extract

Directions

Mash banana in a microwave safe mug. Add and mix in the rest of the ingredients until combined. The consistency should be such that you could pour the “batter” out of the mug (still thick though). If it is too thick, add a teaspoon of almond milk (or other milk) at a time until desired consistency is reached.

Microwave for 2.5-3 minutes (will depend on your microwave). Once cooked, you should be able to invert the mug and the muffin should slide out. Eat as is or cover with your favorite nut butter!
